Leftover Pork Fried Rice

This is a flavorful fried rice to make with pretty much any type of leftover meat. We just happened to have pork on hand when I decided to make it. You can also add green onions,

Ingredients:

1 tablespoon vegetable oil
1 tablespoon sesame oil
1 small onion, chopped
2 carrots, diced
2 garlic cloves, minced
1 cup of diced leftover pork
2 eggs, lightly beaten
5 cups of cooked white rice
2 tablespoons soy sauce
1 tablespoon gochugaru (Korean chili flakes)
salt
pepper

Preparation:

In a large pan, heat the 2 oils, then add in onion, carrots and garlic plus a pinch of salt. Sauté for 5 minutes until soft. Then add in pork and cook until the pork is warmed through. Then add in cooked rice and mix. Add soy sauce, gochugaru and pepper and stir until thoroughly mixed. Push the rice aside so there is a room on the bottom of the pan. Add in eggs and cook through, then mix in with the rice. Taste and adjust seasoning if needed. Serve hot.
