Fettuccine with Chicken Lemon Cream Sauce

What do you do when you’re short on time, didn’t go to the grocery store and have to create something from what you have in the refrigerator and pantry? This lovely dish. Anything with a cream sauce is always a big hit with the kids. If I had arugula or spinach on hand, I would have added that in to get some green leafy items on the plate or served it with a salad but I didn’t. My daughter saw what I was writing about this morning and said “Mmm, that’s so good”.

Serves 4-6

Ingredients

2 tablespoons extra virgin olive oil
1 onion chopped
3 garlic cloves minced
2 chicken breasts cut into 1/2 inch cubes
1 cup white wine
1 tablespoon lemon zest
1 tablespoon fresh thyme, chopped
1 1/2 cups heavy cream
3 tablespoons grated romano cheese
1 teaspoon sea salt – adjust to taste
1/2 teaspoon fresh ground pepper
1 lb fettuccine – prepare to directions on box – do not rinse

Preparation

In a large pan, heat olive oil over medium high heat. Sauté onions and a pinch of salt for about 7 minutes. Then add garlic, lemon zest and thyme and sauté for one more minute. Add chicken and cook until browned. Add white wine and bring to boil until nearly evaporated. Then add heavy cream, let simmer, then add cheese, salt and pepper. Add prepared fettuccine into the pan and mix. Serve with some additional grated cheese on the side.
