Ginger Fried Rice

Ginger Fried Rice

Here is a super simple but delicious fried rice. The eggs on top should be runny so you can mix it into the rice as you eat. We were fortunate enough to get these beauties from our friend Julie who provided us with fresh eggs from her chicken.

Ingredients

1 tablespoon roasted sesame oil
1 tablespoon minced ginger
3 thinly sliced scallions
3 Garlic cloves minced
4 cups cooked Jasmine rice
1 teaspoons Gochugaru
2 eggs
1/2 teaspoon sea salt (adjust to taste)

Preparation

Fry eggs in butter, overeasy.
Heat sesame oil in large non-stick pan over medium high heat. Saute garlic, ginger and scallions until fragrant. About 2 minutes. Then add gochugaru and saute for 1 minute more. Mix in cooked rice and salt until well combined.

To assemble, put cooked rice in large bowl, lay eggs on top and drizzle with sesame oil, additional scallions and pinch of gochugaru
