Watermelon and Arugula Salad

So I’ve mentioned my pear balsamic that I’m in love with. I also have a meyer lemon extra virgin olive oil that is yummy and I thought that the combination of the two would make a fantastic dressing. It turns out that I was right! This dressing is fruity, bright and sweet. Great on arugula to counter balance the bitterness. I used it to dress this watermelon salad that I took to a party. It was a hit!

Ingredients

1 mini seedless watermelon, cubed
5 oz baby arugula
1/4 red onion, very thinly sliced
1/2 cup crumbled feta cheese
2 tablespoons pear balsamic vinegar (click here to buy)
1/2 cup meyer lemon extra virgin olive oil (click here to buy)
Sea salt

Preparation

Whisk together the pear balsamic with the meyer lemon evoo with a pinch of sea salt. Lightly dress the arugula with half the dressing. Arrange the arugula on a platter, add watermelon cubes on top, then onion slices and feta cheese. Drizzle the remaining dressing on the top and serve.
