Spinach Salad with Champagne Dijon Vinaigrette

What makes this very simple salad so good is the combination of flavors. I find that this dressing really makes the salad stand out. And the bacon doesn’t hurt either. I don’t need any sweetness in this dressing but if you find that you need a little, just add a bit of honey to it.

Ingredients

1 lb baby spinach leaves, washed and trimmed
5 strips of bacon, cooked and chopped
2 hard boiled eggs, chopped
1 tablespoon toasted pine nuts
Dressing:
1 minced shallot
1 minced garlic clove
1 tablespoon dijon mustard
2 tablespoons champagne vinegar
1/3 cup extra virgin olive oil
pinch sea salt

Preparation

Toss all salad ingredients in a large bowl. In a separate medium sized bowl, combine all ingredients for dressing except for oil. Then slowly whisk in the olive oil. Season with salt to taste. Dress the salad about 5 minutes before serving to allow flavors to meld.
