Shrimp Cocktail

Shrimp Cocktail

You may be wondering why you need a recipe for shrimp cocktail. All you do is boil some shrimp or defrost cooked frozen shrimp and put out some store bought cocktail sauce right? Well, you could go that route, but you can create something more special with just a little effort.

Ingredients

2 lbs jumbo shrimp, peeled and deveined

1 fennel bulb, quartered

1 onion, quartered

1 teaspoon peppercorns

2 bay leaves

1 lemon, halved

1 tablespoon sea salt

Preparation

Put all ingredients except for shrimp into a large stock pot with about 6 quarts of water. Bring to a boil and let simmer for 30 minutes. Take off heat and with a skimmer, remove all ingredients from the pot, keeping the water in the pot. Return the water to a boil and add shrimp. Boil shrimp for approximately 3 minutes. Drain, rinse with cold water and refrigerate until chilled. About 30 minutes. Serve in a bowl or platter over ice with cocktail sauce.

Cocktail Sauce:

1 cup ketchup

1 tablespoon prepared horseradish (test the spice level and adjust to your taste. Some are stronger than others)

1 teaspoon worsterchire sauce

1 teaspoon lemon juice

Mix all ingredients together
