Deviled Eggs

Deviled Eggs

This recipe is for the traditional version of deviled eggs I do. I’ve tried adding vinegar as many recipes specify but I just don’t like them as much as the simple mayo and dijon mustard combination.  I’ve made these deviled egg recipes for just 6 servings each because I like to mix and match with a variety of types of deviled eggs. So if you are just doing one version, I would double or triple the recipe depending on how many people your trying to serve.

Ingredients

3 hard boiled eggs
1/2 tablespoon dijon mustard
1 1/2 tablespoon mayonnaise
1/4 teaspoon smoked paprika
cornichons sliced

Preparation

Cut hard boiled eggs in half lengthwise. Remove egg yolks and place in medium bowl. Add mayonnaise and dijon mustard and mash together until well combined and smooth. Put mixture into a piping bag with a large tip. Pipe the mixture into the egg white halves, top each egg with a cornichon slice and serve.
