Roasted Brussels Sprouts with Aged Balsamic Drizzle

This is such an easy way to prepare brussels sprouts and always a hit. Even my son likes these.

Ingredients

1 1/2 pounds brussels sprouts
3 ounces pancetta, diced
extra virgin olive oil
aged balsamic vinegar
sea salt
freshly ground pepper

Preparation

Preheat oven to 400 degrees. Wash, trim and cut brussels sprouts in half. Place brussels sprouts on baking sheet in a single layer. Mix in diced pancetta. Drizzle olive oil over brussels sprouts and mix together with your hands to ensure all sprouts are coated. Season with salt and pepper. Roast in oven for 15- 20 minutes. Drizzle with aged balsamic vinegar and serve.
